Chop a couple of shallots really finely and saute gently in some butter. Don’t let it take any colour. Now add a heaped half cupful of Italian rice such as aborio or carnaroli - using the right type of rice is absolutely essential here. Stir it around for a couple of minutes. If there isn’t enough butter to coat the rice grains, add a bit more.
