Standing on one leg, while resting the other, makes sense if only one side of your brain is sleeping. I haven't found out whether this is actually true for flamingos, but for many animals such as dolphins and ducks this is certainly the case. If it requires brainpower to balance on a leg, the leg controlled by the sleeping side of the brain wouldn't be very useful.
